The Mary Fish-Dish

This recipe comes from one of our many jalapeno chip loving fans. We've been so busy making jalapeno chips we haven't had a chance to try it out for ourselves yet. Have you had the chance? If you have made this tasty dish send us an email and let us know how it turned out.

 

1 Tilapia or other similar thinly sliced frozen fish fillet

6-12 Pre-cooked and frozen shrimp. Small frozen bay scallops can be substituted or you can use both

4 Thickly sliced mushrooms

1/4-1/2 Cup frozen peas

Italian dressing

Bloody mary mix

1 Teaspoon of vodka

A handful of Deano's Cheddar Jalapeno Chips

1 or 2 Teaspoons of flour or corn starch can be added if a thicker sauce is desired.

Vegetarians can substitute carrots sliced in half and/or 1/2” sliced potatoes instead of seafood.


Put frozen fish fillet at the bottom of small baking dish just big enough for the fish to fit in. Place peas and mushrooms all around but not on top of fish. Pour in equal amounts of Italian dressing, bloody mary mix and 1 or more teaspoons of vodka over the all the ingredients until everything is just barely submerged. Bake at 350F for 20 minutes basting fish and mixing around ingredients halfway through to make sure nothing gets dried out. Pull fish out after 20 minutes, re-baste (flip fish if desired) and submerge frozen shrimp/scallops in the sauce around the fillet, cook for another 10-15 minutes. Throw as many of Deano's Cheddar Jalapeno Chips as you dare on top just before serving. Oven temp/time can be adjusted since I cook mine in a New Wave Turbo Oven which I highly recommend everyone own.

 

Serves one, double or triple if you have any friends.
